2. In 8 jars or glasses, layer lemon curd, cake, blueberries and whipped cream evenly amongst the glasses continuously to form trifle layers. Serve immediately or store in the refrigerator up to 24 hours before serving. Lemon curd (Makes approximately 2 cups lemon curd) Ingredients: ½ cup caster sugar 4 egg yolks ½ cup lemon juice (from the juice of 3 medium sized lemons) 75g butter, cubed Method: 1. Whisk together egg yolks, sugar and lemon juice. 2. Place in a medium saucepan over medium low heat and whisk constantly until sugar dissolves. 3. Add butter and increase heat to medium high. Cook, whisking continuously, until curd thickens (about 10 minutes). 4. Remove from the heat, strain and cool. Note: This recipe can easily be doubled if needed. Extra lemon curd is lovely on toast, pancakes, waffles, French toast, ice cream sundaes and even milkshakes! If stored in sterilised jars, lemon curd will keep in the fridge for up to 4 weeks. Apple Layer: 4 granny smith apples, core removed, finely chopped 60g butter, room temperature... ½ cup brown sugar ½ teaspoon ground cinnamon Whipped Cream: 300mls thickened cream ½ cup icing sugar 1 teaspoon ground cinnamon 1 teaspoon vanilla extract Cheesecake: 115g cream cheese, room temperature 115g mascarpone cheese, room temperature ½ cup caster sugar ½ teaspoon vanilla extract Garnish: 8 digestive biscuits 1 cup salted caramel sauce 1. Apple Layer: In a small saucepan combine all ingredients. Place over medium heat and bring to a simmer. Cook for 4-5 minutes or until apples are tender. Set aside to cool. Place all ingredients into the bowl your Sunbeam Mixmaster. Using the whisk attachment, whisk the cream until stiff peaks. 3. Cheesecake: Place all ingredients into the bowl of your Sunbeam Mixmaster. Using the scraper attachment beat all ingredients until smooth.

4. Garnish: Place the biscuits into the chopper bowl of your Sunbeam Stickmaster or Food Processor. Pulse until a fine crumb. 5.
