Her blender innovativ gastronomi ind med lige dele comfort food og god gammeldags lækkerhed, for en god ordens skyld tilsat et stænk af rock’n’roll nonchalance. Den forbandede Inderhavnsbro, der forbinder Christianshavn med Nyhavn, er åbnet som kaldet stort set samtidig med 108, som dermed har en direkte forbindelse til byens puls i indre København.

Omgivelserne er labre med udsigt til vand, gamle pakhuse og den shabby (men ikke så chikke) havnefront. Indendørs er der spektakulære vinduer fra gulv til loft og frit syn til det actionpakkede og kokkerige køkken som perfekt forlængelse af den industrielle stil i restauranten. Køkkenchef Baumann er opvokset i Danmark men født i Korea, og han spicer menuens umiskendeligt nynordiske stil op med diskrete referencer til sit asiatiske ophav. Syltet shiso er aromatisk garniture til en intens lammetatar, og wasabinablade giver bid til det braiserede svinebryst, som serveres i en wrap af uimodståeligt crispy-sødt-salt mælkeskind. Gå i krig og spis det syndige, forførende rod med bare næver. Som Noma-aflægger er der naturligvis både råvarer samlet i naturen og ganske meget fermenteret på menuen. Der er endda også designer- (eller i hvert fald eksperimentelle) grøntsager dyrket i samarbejde med Aarstiderne. Her har vi at gøre med leaf-to-root dining i første potens, hvilket demonstreres elegant af en crispy kreation af romainesalat.

Stokkene er i centrum, mens bladene spiller birollen som sauce toppet med tørret og revet pighvarrogn. Sellerieddike-syltet makrel spiller også på en asiatisk tangent trods sin temmelig lokale oprindelse, for hvad er det dog på toppen? Her er både plads til sjov og alvor, og de syredominerede/ofte let oxiderede vine er som skabt til den nuancerige men potent smagfulde udgave af det nynordiske køkken, som praktiseres på 108, og flere vinmatch er decideret mageløse.
