Paul and I are big fans of hummus…all kinds, we love it.  I also love to make it from scratch.  But you know what I don’t like?  Peeling those little skins from the chickpeas.  It weirdly grosses me out and so I choose not to do it very often. You know what doesn’t have skins that makes really stellar hummus?  Yep – black beans!  And they just go so well with some of my favorite herbs and spices like cilantro, cumin, Sriracha and lime juice.  So my love for Mexican foods and flavors meets somewhat-healthy for this black bean hummus.  And what makes it even easier is my trusty Blendtec whips it up in no time, with virtually little effort on my part.  I used the Twister Jar which has a lid that spins in the opposite direction of the blade and helps all of the ingredients to be incorporated so quickly. I made this dip for a meetup of some Kansas City Bloggers.  (Have I ever mentioned that I am so grateful for a group like this?)  I was in a hurry, threw in what I had on hand, and ran out the door.  

But failed to photograph.  And of course, everyone loved it.  So it didn’t take me long to throw together another batch of black bean hummus to share with you.  It’s so creamy and flavorful.  And did I mention super simple and quick?  I know it lacks tradition, but this is probably going to make an appearance at Thanksgiving! You might remember when I reviewed my trusty Blendtec blender a while back when I made Limemade Green Smoothies…I have enjoyed lots of smoothies, homemade salsa, crushed up the crumbs for the crust of my pecan pie bars…you get the idea. Yield: 1 1/2 cups hummus Prep Time: 10 min A quick and flavorful recipe for black bean hummus with green onions, cilantro, cumin and Sriracha. 1 (15-ounce can) black beans, rinsed and drained 1 tsp. Lime juice 1 tsp. ground cumin 1 tsp. dashes Sriracha Dash of crushed red pepper flakes 2 Tbs. olive oil Combine the beans, green onions, cilantro, tahini, garlic, lime juice, cumin, Sriracha, salt and red pepper flakes in a powerful blender (or food processor) with all ingredients besides the oil.
